Banana Bread

  • 3-4 ripe bananas
  • 100g caster sugar
  • 40g butter
  • 150g self raising flower
  • 1 tsp baking powder
  • 1 egg, beaten
  • 1 tsp vanilla essence


Step 1

Line a loaf tin or a small tin with greaseproof paper. Pre-heat the oven to 175 degrees.

Step 2

Mash the bananas, then stir in the melted butter. Mix in sugar, eggs and vanilla essence.

Step 3

Sprinkle the flour and baking powder over the wet mix and stir in.

Step 4

Pour into tin and bake in the centre of the oven for 1 hour or until firm to the touch. If the cake starts to burn on top, cover it with foil for the rest of the bake.

Step 5

Cool the cake in the tin. Banana bread keeps well for a few days in an airtight container.
