Easy Chocolate and Courgette CupCakes

  • 125g of flour
  • 150g brown sugar
  • 3 tbsp of cocoa powder
  • 1/2 tsp of baking powder
  • 1 tsp of bicarbonate soda
  • 2 eggs -beaten
  • 150 ml organic sunflower oil
  • 1 courgette - grated


Step 1

Preheat the oven to 180 c. In a bowl mix together the flour, the sugar, the cocoa, the baking powder and the bicarb. Pour in the oil and the beaten eggs and mix well. Stir in the courgettes.

Step 2

Pour the paste into a greased cupcake tin and bake for about 20 min. (You could also make a cake by pouring it into a bread tin and cook for 50 minutes (when you insert a knife in the middle should come out dry).

Step 3

For a chocolate icing: Melt 200g of dark chocolate, add 5 tbsp of milk and 30g of icing sugar and mix until you get a nice paste. Then Ice the cake. (make sure the cake is cool before icing it).
