Easy Chicken with vegetables (weaning)

  • 1/2 small Onion
  • 1 Parsnip
  • 4-5 Broccoli Florets
  • 1 skinless Chicken breast (100 - 150g)
  • 1 tsp oil
  • 300ml (1/2 pint) Water
  • Try other veg combinations: potato & carrot, green bean & swede, peas & butternut squash (remove seeds)


Step 1

Peel the onion and chop into small pieces. Remove both ends of the parsnip, peel it and cut into small chunks or sticks. Detach the broccoli floret from the stalk. Chop the chicken into small chunks or strips.

Step 2

Heat the oil in a saucepan. Add the chopped onion and cook over a medium heat for 3-4 minutes stirring occasionally. Add the chicken to the onion and cook until it turns opaque an you can no longer see any pink. Add the parsnip and the water to the pan, bring to boil and allow to simmer with the lid on tor 10 minutes. You can add some fresh or dried herbs to the water for more flavour (thyme, rosemary or sage). Add the broccoli to the pan and simmer for 8 minutes with the lid on, or steam in a metal colander or sieve over the pan.

Step 3

Remove the chicken and vegetables from the pan serve as finger food or mash with a little of the cooking water.
