Easy Gingerbread Men or Frogs…2015-01-25

- 400g Flour
- 1/2 tsp Bicarbonate of Soda
- 2 tsp Ground Ginger
- 220g dark soft Brown sugar or Muscovado sugar
- 150g Butter
- 1 Egg (beaten)
Preheat oven to 180 degre Celsius. Grease 2 trays with sunflower oil (or on baking paper).
In a bowl, mix together the flour, bicarbonate, ground ginger and the sugar. Add the butter and rub in with your fingers until the mix looks like fine breadcrumbs. Add the egg, stir and then knead until you get a nice dough. If the dough is too sticky, add some flour. You can refrigerate the dough (OPTIONAL).
Roll out the dough on a floured surface (about 5 - 6mm thick). Choose cookie cutter to cut out shapes with no discrimination for size or shapes! Place on a tray and leave them in the fridge for 10 minutes before cooking (so that they keep their shape).
Cook for 8-10 minutes or until golden. Let the cookie cool before serving or decorating.
