Haloumi, Beans & tomato salad

Ingredients

  • 250g Haloumi cheese
  • New potatoes
  • tomatoes (any size or shape will do)
  • Green beans or broad beans
  • black olives
  • For the salad sauce: mix olive oil, cider vinegar, finally cut fresh onions, a tsp of honey (optional), salt and pepper

Method

Step 1

Put potatoes in cold water and bring to boil for about 15-20 minutes (until soft inside). Add the beans in the last 5 minutes

Step 2

Rinse the haloumi in cold water (it will taste slightly less salty). Cut in slices and grill in a pan until golden brown

Step 3

Cut the olives and the tomatoes and put in a salad bowl. When the potatoes and beans are ready, rinse under cold water, cut in half and add in the salad bowl.

Step 4

I put the ingredients without the sauce for the kids. For grownups I add the salad sauce and toss and then add the haloumi cheese on top.
