Home-made Vegetable Soup

Ingredients

  • Carrots x 2oz (60 g)
  • Leeks x 1 1/2
  • Swede x 2oz (60g)
  • Potatoes x 2 small ones
  • Celery x 1 stick
  • Spinach x small handful
  • Pumpkin (when in season)
  • Cabbage x 2oz (60g)
  • Onion x 1
  • Vegetable Stock x 2 cubes
  • Pepper x 1 tea spoon
  • Lentils x 1/2 cup (50g)

Method

Step 1

Fry the Onions and Leeks together

Step 2

Add all the Vegetables (sliced) & cover with water

Step 3

Boil till cooked then liquidise

Step 4

Add Pepper to taste & Vegetable Stock
