Mixed Bean Curry

Ingredients

  • Onion x 1
  • Kidney Beans (tinned or dried) x 8oz (225g)
  • Pinto Beans (tinned or dried) x 8oz (225g)
  • Black-eyed Peas (tinned or dried) x 8oz (225g)
  • Chick Peas x 8oz (225g)
  • Red Lentils x 1/2 cup (100g)
  • Vegetable Stock 1 - 2 cubes
  • Tumeric x 1 1/2 tea spoons
  • Cumin x 1/2 tea spoon
  • Clove x 1/2 tea spoon
  • Cinnamon x 1/2 tea spoon
  • Coriander x 1 1/2 tea spoons
  • Paste: 1 x Ginger, 1 x Chillies, 2 x Garlic cloves and 1x Coriander

Method

Step 1

If using dried Beans - soak overnight

Step 2

Make a Paste - blending Ginger, Chillies, Garlic & Coriander

Step 3

Fry Onion in Olive Oil. Add the Paste & all the Spices

Step 4

Let it cook for a while then add the Beans

Step 5

When those ingredients have nearly cooked, add the Lentils

Step 6

Add Vegetable Stock to thicken the Curry
