Pea and Feta omlette

  • 2 eggs
  • 2 tbs milk
  • 1 cup peas (fresh or frozen)
  • 1 half onion
  • 1 pinch grated nutmeg
  • 2 tablespoons extra virgin olive oil
  • 75g feta


Step 1

Chop the onion finely and in a small round frying pan shallow fry the onion in the olive oil for ca 5 min on medium heat or until it is going soft

Step 2

Then add the peas with 1 (or 2) tablespoon of water and place a lid on the pan for ca 3 min, or till the peas are just cooked (might be 5 min if the peas are frozen)

Step 3

break up the feta into sugar cube sized pieces

Step 4

whisk the eggs together with the milk and a pinch of grated nutmeg and add the feta

Step 5

lower the heat to the lowest setting and add the egg mixture to the frying pan and mix it with the peas

Step 6

place a lid on the pan and wait for 5-7 min, when the egg is half cooked but still runny in the middle and on the top

Step 7

place the frying pan under a medium hot grill and grill for another few minutes till the egg is cooked throughly. In this last step make sure you don't burn the eggs as this can happen easily when not paying enough attention.
