Pumpkin Soup

Ingredients

  • 1 large slice of pumpkin chopped (800g)
  • 1 potato chopped
  • 1 onion
  • 2 cloves of garlic (cut in half and press)
  • spoonful of olive oil
  • veg or meat stock (enough to cover the mix)
  • 1cm of ginger (OPTIONAL)

Method

Step 1

Gently cook the onion, garlic, chopped pumpkin and chopped potato (and ginger) in the oil. Cook for about about 5 min.

Step 2

Cover with the stock and simmer for 30 min. Blend in a mixer.

Step 3

Add any of your favourite spices (i.e salt & pepper, curry or soja sauce). Bon appétit!
