- 1 large slice of pumpkin chopped (800g)
- 1 potato chopped
- 1 onion
- 2 cloves of garlic (cut in half and press)
- spoonful of olive oil
- veg or meat stock (enough to cover the mix)
- 1cm of ginger (OPTIONAL)
Gently cook the onion, garlic, chopped pumpkin and chopped potato (and ginger) in the oil. Cook for about about 5 min.
Cover with the stock and simmer for 30 min. Blend in a mixer.
Add any of your favourite spices (i.e salt & pepper, curry or soja sauce). Bon appétit!
