Quick Rice and Chicken Stir Fry

  • 1tbsp coconut oil
  • left over rice
  • 1/2 mug of frozen peas (defrosted in hot water)
  • 1/2 mug of sweetcorn
  • leftover chicken cut finely (you could use any cooked meat) or replace the meat with fresh prawns
  • 1 egg
  • some soya sauce


Step 1

If you don't have any left over rice, follow this simple rice recipe

Step 2

Heat the coconut oil. Toss in the rice. Add the peas, corn and chicken.

Step 3

Break an egg on top of the rice mix and mix well in the rice (make sure the egg is cooked). Add some soya sauce to taste
