Ingredients

  • A fair amount of olive oil
  • 1 Onion - sliced
  • 2 Cans of peeled tomatoes
  • 4 Garlic cloves - crushed
  • Salt & Pepper
  • 2 Aubergines - finelly sliced
  • 3 Peppers (red, yellow and green) - sliced
  • 4 Courgettes - finelly sliced

Method

Step 1

Cook the onion in olive oil until soft. Add garlic but don't cook for too long so that it does not burn. Add the tomatoes, salt & pepper and simmer for about 30 minutes

Step 2

Add the sliced aubergines, courgettes and pepper to the tomato sauce. Cover and simmer for another 20, 30 minutes. Stir regularly.
