- 2 courgettes, halved lenghtways
- 200g cherry tomatoes
- 1 garlic clove
- 1 mozzarella ball, chopped into cubes
- Grated Parmesan
- Chopped fresh basil
- Olive oil
- see salt & black pepper
Heat the oven to 190 degrees c. Scoop out the courgette flesh and put aside in a bowl. Place the courgette halves on a baking tray - skin side up Drizzle with oil and bake for 10 min.
Chop the garlic, courgette flesh and tomatoes and mix together. Add the basil, a drizzle of oil, season and mix together.
Fill the courgette halves with the mix and top with grated parmesan. Place the mozzarella cubes on top of the parmesan.
Bake in the oven for 15-20 minutes until golden brown.
