Vegetable & Chick Pea Curry

Ingredients

  • Courgettes x 2
  • Chick Peas x 1 small tin
  • Aubergines x 1 small one
  • Mushrooms x 4oz (110g)
  • Vegetable Stock x 1 cube
  • Green Peas x small tin (or half a mug of frozen ones)
  • Cinnamon x 1/2 tea spoon
  • Clove x 1/2 tea spoon
  • Cumin x 1/2 tea spoon
  • Tumeric x 1/2 tea spoon
  • Coriander x 1 1/2 tea spoons
  • For the Paste: 1 small piece of Ginger, 1 x Chilly, 2 x Garlic Cloves, 1 x small bunch of Coriander

Method

Step 1

Make a paste using Ginger, Chillies, Garlic & Coriander

Step 2

Fry Onions in Olive Oil. Add the Paste & all the Spices together. Let it cool for a while

Step 3

Add the Courgettes, Chick Peas, Aubergines & Mushrooms, stock and a bit of water

Step 4

When the vegetables have nearly cooked, add the Green Peas. Serve with Couscous & Salad
